Just arrived for the first time in Melbourne, Australia. Many people have told me that I need to be see drink taste coffees in Australia. Here I am now, attending the MICE (Melbourne International Coffee Expo).

First day.... All i had in my mind was "COFFEE!!!" checked in at St. ALi Family Roasters at Yarra Place. 

Didn't wait a minute, ordered my first drink:-

1. Espresso - Ethiopia - Wottona Boltuma - Sidamo it's really good , where you can taste dried apricot, tangerine, strong lemony and a great honey finish.

My second drink while having tasty place of Ox tongue for my brunch....

2. Flat White - Colombia - El Meridiano AA , love this drink! You can taste apricot, cherry and dark chocolate finish.

Lastly....

3. Filter Coffee - Ethiopia - Wottona Boltuma prepared with GS3 and filtered lastly using V60.  Taste sugary, plums, fruity fragrant of strawberry ... Light and Complex.

I have purchased a small lot of beans from St. ALi, will be bringing back LIMITED EDITION at CAFFE CREMA... stay tuned!

Tips about Coffee : Measure your Coffee

Do you have experience in Baking? Making Cookies?

Everything is about ratio & measurement. You literally measure everything, flour, how many eggs, teaspoons of sugar, yeast etc.

You should measure your coffee too! So go get a small measuring scale +-1g sensitivity. There are many different measurement and ratio in the world of coffee. Every continent uses a different ratio, but why? Everyone likes their coffee differently... Mild , Strong , Powerful &  I don't want to sleep at all ! 

Brewing ratio is the very important, it will decide how strong your coffee will taste. Of course it's not the only deciding factor (one of the many factors) 

Brew ratio 1:18 , 1:17, 1:16 , 1:15 the list goes on... but what is that?

Let's take 1:18, what does it mean to me?

> 1 part of coffee to 18 parts of water. Say i am brewing 10 grams of coffee, I will use (10*18) 180 grams of water. It's advisable for coffee drinker to play around with the ratio to find the perfect ratio best suites your tasting.

Turning water into Coffee is not as simple as it seems... plenty of ways making a perfect cup of coffee. Do you know if you are using the right way? Follow our Blog to learn more.

Today's first tip!

1. Buying Fresh Beans! 

Every chefs knows! You cook with the best and freshest ingredients. So, what's the major ingredient of Coffee? It's the beans. Starting from today, please purchase fresh beans. (NOT GROUNDED BEANS).

a. Best by date instead of Roasted date. You need to know when its roasted to ensure freshness. All recently roasted beans best to allow them to sit at least 5 to 10 days prior using to allow de-gassing (CO2). 

b. Roasting jargon.. light , city , medium , dark and dark dark. Specialty coffee roasters will let you know how their beans is roasted and tasting notes for their beans. 

c. Never buy coffee in Jars, plastic container or clear glass container. 

d. Buying too much coffee! Only purchase what you need, best is 200g to 250grams per pack.

e. Coffee beans should spell out where their blends and beans are from. Without such info? Don't buy it!

f. Smell your coffee! You should enjoy sniffing your coffee beans. If they don't smell good, i doubt it will taste good!

Italian Do & Don'ts about Coffee....

Coffee drinking in Italy is taken very seriously & there are many do & don'ts about Coffee Drinking. I love traveling to Italy, it's one of my favourite place in Europe.... It's one place you will never get bored drinking espresso from Morning till Night... I mean even midnight!

So what's the Do & Dont's about Coffee in Italy?

1. No Coffee to Go - why are you so busy that you can't enjoy a cup of coffee at the Cafe?

2. No Cappuccino after breakfast - why would like want to drink a hot frothy drink after food.

3. Espresso Anytime - espresso is something Italians drink anytime of the day. But don't be confused with Asian Style espresso drink and Italian. The dose in Asia is way higher! You get high with just a single cup.

4. Don't drink dishwasher water, Americano, instead order a Caffe Lungo 

5. Don't order a "Latte" like you normally do in Asia... In Italy, you will get a glass or cold milk. Latte = Milk in Italian. Instead, order Latte Macchiato instead.

6. Decaf, order if you must... Why would you want to drink decaf without the energy! uhhmp

It's so fun and educational visiting a local roaster in Malaysia.... discussing how they source, roast beans. Drinking a cup of coffee has never been the same! The more you learn the less you know.
